1. Application Background
In the traditional production process of baijiu, various factors affect the alcohol yield and the output of high-quality liquor. Among these, the temperature of the fermenting mash directly influences fermentation, microbial growth, and metabolism. Therefore, during the sealed-pit fermentation stage in baijiu production, monitoring the temperature of the mash in the fermentation pits provides important guidance for production.
2. System Introduction
With the development of technology, intelligent inspection methods have gradually replaced manual inspections. Starting from the actual detection needs in baijiu production, our company has designed the XKCON Wireless Multi-Point Fermentation Mash Temperature Monitoring System for baijiu fermentation pits, suitable for use in baijiu production enterprises.

This system consists of three components: the probe-type wireless thermometer XKCON-MT-W-01, the wireless communication gateway XKCON-WG41, and the PC management software. It is suitable for full-process monitoring of mash fermentation temperature during sealed-pit fermentation, quickly and accurately collecting and detecting mash temperatures. The data is real-time, helping baijiu production enterprises strengthen the analysis and control of fermentation temperature, thereby improving alcohol yield and the output of high-quality baijiu.

1. System Features
1) Customizable Wireless Thermometer: The specific length of the temperature rod and the number of temperature measurement points inside the rod can be customized according to the actual depth and shape of the pit. Options such as 2m, 2.5m, and 3m are available. The wireless temperature rod comes with a handle for easy installation;
2) Wire-free in Fermentation Workshop: The pit temperature measurement device is powered by a built-in large-capacity lithium battery, and it uses LORA signal wireless transmission for communication. Therefore, no wiring is required during installation in the baijiu fermentation workshop, greatly shortening the construction period and reducing economic costs;
3) Safe and Pollution-free: The probe part of the pit thermometer is made of 304 stainless steel, which has stable composition, excellent corrosion resistance, and good intergranular corrosion resistance. During use, it does not release harmful substances or cause any contamination to the fermentation mash, ensuring high safety.
During use, the probe-type wireless thermometer is inserted into the sealed pits one by one, and the detection frequency is set (e.g., once every 10 minutes). The wireless communication gateway receives all data sent by the thermometers and uploads it to the upper-level management software via wired communication. Enterprise managers can monitor the entire process through a computer web page or mobile app.
2. Main Functions:
1) Full-process Temperature Monitoring: The pit temperature rod can sensitively detect subtle changes in mash fermentation temperature, displaying the real-time temperature digitally through software while automatically storing historical data;
2) Intelligent Data Analysis: The upper-level management software uses IoT and data analysis technologies to perform intelligent analysis of all uploaded data and display it on the software page in curves, graphs, and other forms;
3) Data History Traceability: The upper-level management software automatically stores all monitoring data throughout the process and supports data download, ensuring traceability for the entire fermentation process;
4) Intelligent Abnormal Monitoring: The upper-level software has main functions such as device supervision and parameter setting. If real-time temperature values are abnormal, the system will promptly notify management at all levels via digital display, mobile phone, or other methods, allowing timely adjustment measures.
